I had a headache most of the night so this morning was slow going. It is another homework day and things are due so I had to stay focused.
I have been asked what it is that I have been eating. Generally, it is all raw, organic vegetables. On rare occasions, like after a fast, I have some fruit. The only cooked food is a little organic brown rice that I have at breakfast. Typical breakfast is a shot of fresh wheatgrass juice, a shot of coconut oil, a glass of fresh buco (coconut water) with a shot of apple cider vinegar in it, fresh coconut meat, and brown rice. Lunch is usually a salad. Dinner can be salad, a raw vegetable soup, vegetable wraps, a vegetable pizza (made from dehydrated flax seed crust with a blend of chopped veggies on top).
The salads I have aren't always green salads. One of my favorites is chopped cucumber, tomato, black olives, capers, dried dill and a splash of olive oil. Another salad is fresh pomelo (its like grapefruit but not sour) with chopped pecans and fresh lemon grass. These two bring a smile to my face when I see them on the dining table.
