Day 33

I'm not sure if you can see other people's comments so I am including the comment that Karen sent me.

"If anyone wants to start using biodegradable and skin-friendly soap, look for Dr Bronner's. The peppermint is refreshing and if you like lavender, they have that too.

"Mozart, our son, went many months without using shampoo -- he said that the 1st 2 weeks his hair was gunky and after that, you couldn't tell that he had not shampooed and it's true! When I saw him, his hair was shiny, soft, and odor-free. If that grosses you out and you still want to use shampoo, look for Nature's Gate. And instead of conditioner, use vinegar. Your hair will smell of it only when wet. Vinegar removes the build-up that shampoos tend to do and it leaves your hair soft and shiny."

Today Bebing taught me how to make a "healthier" ice cream. Now don't be mistaken and think that Tom lets me eat this ice cream, but I did stick my finger in the empty mixing bowl and got a little taste. It was fantastic. Of course, I haven't had anything but veggies for a month, but Tom assures me that this is really good stuff.

Chocolate Ice Cream

Grate the meat of 4 coconuts and add 1/2 cup water.
Squeeze out all the juice.
Put in refrigerator overnight. The water will separate. Throw out the water and keep the cream.
The next day:

Grate 2 more coconuts and add 1/4 cup water and squeeze out milk.

Put 1/2 cup good cocoa in a sauce pan. Add about 1/3 cup water and slowly heat.
Add 1 and 1/4 cup Turbinado sugar (raw sugar) and dissolve.
Add 2 cups of the cream (from the 4 coconuts that were in the fridge overnight).
Add 1 cup coconut milk (from the 2 coconuts you just squeezed out).
Add 1 t vanilla and 1/4 t almond extract.
Add 1/2 cup chopped pecans.
Put in refrigerator and let cool.
When cool, put in ice cream maker and watch the magic happen!
Invite Leanne over for ice cream (critical step!).

If using fresh coconut is too much work, you might try the canned coconut version, but somehow, I don't think it will be as good.
